I did some about 20 years ago, but not enough so as to be able to recommend something to ya. A buddy & I rented kayaks from Hudson Trail outfitters and decided to Kayak the Potomac river from below Great Falls to Fletcher's Boat House. We didn't know about Little Falls Dam, and only by the grace of God and thinnest margins are we alive today. If they weren't so tippy I'd enjoy it more. The ones we rented had alot of rocker and not much keel and were very hard to keep going in a straight line. Sounds like you're thinking about something a little more stable. We practiced and practiced trying to eskimo roll 'em, and never could pull it off.
