That looks good. I had a buddy who had hind-quarter haunches cut like that at the butcher. Do you do 'em yourself, or have somebody butcher them that way? Looks to me like it would be hard to cut them that way yourself.

sorry so late on the reply. i take all my deer to listmans in severna park. he only charges me $40 and does a good job.
